Hayato is looking for an Executive Sous Chef to work in our open kitchen and serve customers at the counter.
Applicants must have a fundamental ability in all aspects of Japanese cooking: Sashimi, Agemono, Yakimono, Mushimono, and Nimono.
General knowledge of sake is required, and ability to make soba and udon by hand will be considered.
All candidates are expected to be able to produce a kaiseki-style meal from beginning to end with no outside guidance.
Experience working in Japan is not required but will be strongly considered.
